Cake Recipe From Scratch
Homemade, No Fillers & Tastes Great!
I love
making this cake recipe from scratch. A great tasting cake with
buttercream icing makes it heavenly. Oma would be so proud.
During its 50 minute baking time I can get all the dishes cleaned and
prepare both the sweet buttercream icing and the vanilla pudding based
buttercream icing. This basic yellow cake is great for decorating with
frosting and without any store bought mixes tastes quite filling with
just a couple of small pieces.
A great cake for birthdays, anniversaries Christmas or any celebration.
- Preparation Step: Ingredients List
- - 6 cups flour
- - 2 Tbsp baking powder
- - 2 tsp baking soda
- - 3 cups sugar
- - 2 tsp vanilla extract(2 packets vanilla sugar)
- - 3/4 cup butter
- - 3/4 cup vegetable oil
- - 2 cups milk
- - 7 egg whites
- - 1/8 tsp salt
- - 2 tsp cream of tartar(1 packet sahnesteif)
Recipe Step #1: Pan Preparation
- Lightly grease two medium cake pans and sift flour over pans
- Tap out excess flour from the pans
- Preheat oven to 160C (325F)
Recipe Step #2: Making Cake Batter
- Combine flour, baking soda & powder in a mixing bowl, set aside
- Cream butter, sugar 7 vanilla with a handheld mixer or standmixer
- Cream until light and fluffy
- Add 1/4 cup oil and cream again
- Add flour mixture alternately with milk and remaining oil
- Mix thoroughly
Recipe Step #3: Meringue & Cake Batter
- Combine egg whites, salt & cream of tartar into a mixing bowl
- Make the meringue using a hand mixer or standmixer on high
- Mix until meringue forms stiff peaks but not dry
- Fold meringue into batter and fill pans up to approx. halfway
- Place filled cake pans on middle oven rack
- Bake 50 min or until inserted knife or toothpick comes out clean
- Muffins or cupcakes only need 20-25 min, check the same way
- Remove cakes from the oven and cool for 10 minutes in their pans
- Transfer the cakes onto wire cooling racks to completely cool
Medium sized cakes and sometimes half a dozen cupcakes as well. I
decorate the cakes piping sweet buttercream icing, a softer cream cheese
frosting or our favorite light & creamy pudding based buttercream
icing.
With a couple of 'runs' making this cake recipe from scratch will become
almost second nature and the iced cakes taste professionally fantastic.
