Valentines Cookies
These valentines cookies are awesome
My mother taught me how to make these cookies many years ago as almond
and lemon cookies that used egg yolks left over from making meringue
based cookies. No flour is used so these are nice gluten free cookies.
German cookies with gentle sweetness, traditionally called 'Zitronen
Hertz', always cut in heart shapes--great for your valentine this
Valentines Day.
Forget chocolates for your valentine, they will LOVE these almond cookies!
- Preparation Step: Ingredients List
- - 4 medium egg yolks
- - 160g sugar
- - 1/8 tsp baking powder
- - 4 drops lemon
- - 1 tsp vanilla extract(1 packet vanilla sugar)
- - 250g ground almonds
- - 1/4 cup sifted icing sugar (powdered sugar)
Recipe Step #1: Making The Dough
- Combine egg yolks, sugar & vanilla in a mixing bowl
- Using hand mixer or standmixer on high, cream until light & fluffy
- Beat in lemon and backing powder
- Add 100-150g of ground almonds and mix on low speed
- Knead in the rest of the ground almonds by hand
Recipe Step #2: Making The Cookies
- Preheat oven to 175C (350F)
- Sprinkle icing sugar on baking surface & roll dough 1/2 cm thick
- Use heart shaped cookie cut-outs and cut out cookies
- Dip into icing sugar to prevent dough sticking to cookie cut-outs
- Place cookies 2-3cm apart on parchment paper lined cookie sheet
- Bake 1 sheet on middle rack 8-10 min until lightly colored edges
- Cool on cookie sheet for 5 min then transfer to wire cooling racks
- Knead left over dough, roll out with icing sugar, cut out & bake
- Ice cooled cookies with lemon icing as described below

- Icing Ingredients List
- - 1-2 Tbsp squeezed lemon juice
- - 1-2 Tbsp red berry juice
- - 1 cup sifted icing sugar
- Making The Icing
- Using a fork or whisk add lemon juice to the icing sugar
- Add berry juice to reach a desired red or pink color
- Continue adding juice until consistency is easy to spread
- Use a pastry brush to ice cookies
A recipe that puts to good use the egg yolks left over from making our
'zimtstern' cinnamon star cookies and with a nice red or pink lemon
